I usually take Mondays slow as far as homeschooling goes. We review last weeks lessons and make sure the information has 'stuck' & finish up any projects.
Since today I only have painting and reading on the agenda we took the morning off for some much needed veggin' out.
So far my kids have built a fort, read some books to each other, learned how chocolate is made from tree to factory (via YouTube video) and learned the art of Japanese T-shirt folding that we all had fun doing on the living room carpet together.
Well off to whip up lunch. Nachos sounds good. I got some yummy flax tortilla chips from Trader Joe's this weekend that are just sooooo good & I got some left over Vegetarian refried beans and a small chunk of cheese in the fridge. I think I'm even gonna add some roasted corn I have in the freezer. And to round it out a sliced apple with cinnamon and some maple almond butter to dip them in.........yum!
